Offering a range of beef, game, poultry and seafood, they cook on a real wood fire grill. Using natural fuels, such as wood or charcoal rather than gas or electricity, gives a heat that is untainted, allowing food to retain its natural fresh flavour. Thomasina's source their fuel from mallee tree roots, which are baked to create a more combustible form of charcoal, thereby enhancing the flavour. The restaurant is famous for the unique taste which the Mallee Charcoal Grill gives to their steak, the house speciality.
